NJ Star is a good program to use as you can download and evaluate it before you purchase it.
Another great piece of software is Twin Bridge Chinese Partner.

I just want to point out the differences
between the programs already suggested (which are great)
Twinbridge Chinese Partner works with a standard
word processor and inserts the Chinese code into
the document and also acts to interpret Chinese
code into character output on the screen. It is
excellent for use on the Internet, but it is not
really a Word Processor in and of itself. One of it's
strong points is the English input method.
NJStar's word processor is a stand alone application
that allows a person to write Chinese. This program
does not write Chinese into other programs without
using cut and paste (and that gets tricky). However,
NJStar does offer a separate freeware program called
NJWin that interprets chinese code on webpages.
I use both, NJStar for typing long documents, and
Chinese Partner for web-applications and surfing.
